## Ingredients

### Bagel dough

- 4 cups bread flour
- 2 tsp active dry yeast
- 1½ cups warm water (about 104°F)
- 2 tbsp brown sugar
- 2 tsp salt
- oil (a little, for the bowl)

### Boiling water

- 2 L water
- 2 to 3 tbsp honey or maple syrup

### Egg wash

- 1 egg
- 1 tbsp water

### Toppings

- everything bagel seasoning, coarse salt, sesame seeds, etc. (your choice)

## Instructions

1. Mix the yeast and warm water (about 104°F). Let stand 5 minutes, until bubbly.
2. Add the brown sugar, salt and flour. Knead 10 minutes on a lightly floured surface, until the dough springs back.
3. Place in an oiled bowl, cover and let rise 1 hour 30 minutes, until doubled.
4. Punch down. Preheat the oven to 425°F and bring the water and honey to a boil.
5. Divide into 8 to 12 balls. Poke a hole with your thumb and stretch into bagels. Cover with a towel.
6. Boil 2 to 4 bagels at a time, 1 minute per side. Transfer to a parchment-lined baking sheet.
7. Brush with egg wash and add toppings.
8. Bake on the middle rack 25 minutes, rotating the pan halfway. Rest 20 minutes on a rack.

## Notes

These will be the best bagels you’ve ever had, I promise. You’ll be the star of Sunday brunch!

To serve, I recommend the classic: smoked salmon, cream cheese, onions, capers and lemon. To store them, I reuse my bags.
