## Ingredients

- 1 large eggplant
- 1 zucchini
- 2 bell peppers (I like one red and one green for colour)
- 2 large garlic cloves, roughly chopped
- 1 large yellow onion
- 1 can diced tomatoes
- 1 can chickpeas
- 2 heaping spoonfuls tomato paste
- a heavy drizzle of olive oil
- salt
- pepper
- 1 pinch thyme

## Instructions

1. Preheat the oven to 400°F. Cut the eggplant, zucchini, peppers and onion into bite-sized cubes.
2. Put the vegetables in an oven-safe Dutch oven, eggplant on top. Add the garlic, oil, salt, pepper and thyme. Mix.
3. Bake uncovered on the middle rack 20 minutes. Stir and bake 20 minutes more.
4. Add the tomatoes, chickpeas and tomato paste. Cover and bake 1 hour.

## Notes

Welcome to Office Lunch, episode 2! A ratatouille that’s perfect as fall rolls in: put it in the oven, forget about it, and get other things done in the meantime. Gabcooks style: simplified, no fuss.

Eggplant isn’t for everyone. If you don’t like it, just use more zucchini. In the video I make a double batch, so it’s a big quantity. The rest goes into lunches (or the freezer).

For me, the goat cheese is what makes this recipe. Seriously, add it.

**Serving suggestion:** over orzo, topped with crumbled goat cheese and fresh basil.
