## Ingredients

### Apples

- 5 Cortland apples (about 900 g)
- ½ cup brown sugar

### Crumble topping

- ½ cup brown sugar
- ½ cup unsalted butter, at room temperature
- ½ cup all-purpose flour
- 1 cup oats (quick oats or whatever oats you have)
- ⅛ tsp salt

## Instructions

1. Preheat the oven to 350°F. Grease an 8x8 pan.
2. Core, peel and halve the apples, then cut into thin, even slices.
3. In the pan, toss the apples with ½ cup brown sugar until no clumps remain. Spread evenly.
4. **Topping.** Rub together the remaining brown sugar, oats, flour, butter and salt by hand until small clumps form. Spread over the apples.
5. Bake 50 minutes.

## Notes

Got talked into apple picking and now there’s an 11-lb bag of Cortlands sitting in your kitchen? The crisp is the first of three recipes from my apple day (along with the [freezer apple pies](/en/recipes/apple-pie/) and the [Apfelradln](/en/recipes/apfelradln/)).

**Gab’s note:** my apples were a lot bigger than expected, so I had to double the topping. If you use a bigger pan, plan on 7 to 8 apples and make 1.5 times the topping.

**Zero waste:** keep your peels and cores, cover them with water and boil for 45 minutes. Strain through cheesecloth to make apple jelly.
